You know... you all are keeping me well entertained and laughing through my computer disaster. :laugh: All I need is one of Kat's cookies. (Please post the recipe!)

Did I ever tell all of you that my son in law is a genius? (He actually is, but that's the beside the point.) He got my poor little Dory working again! :shock: He doesn't know how long she'll last, but I was able to get all my passwords (which I should have done long ago :blush:) and tomorrow I'll get all my family pics and a few documents I don't want to lose and then if Dory bites the dust, at least I'll have those things. Feels SO good to be back in familiar territory. (Did I mention that I HATE windows 8? :laugh:)

Anyway... I'm still up the creek without a paddle with the website. Something has gone terribly wrong and no matter how many times I run around it, pound on the windows and wiggle the doorknob, I can't get in. I've sent emails, requesting help and it tells me that an email has been sent. I sure would like to know WHO they sent them to, because it wasn't to me. :evil:

Sooo... I'm looking at building a new website. :blink: Can I do it? We'll find out! :facepalm:

Okay... carry on with the road trip plans. Just wanted to fill you in!

Aww Kayte..No interwebbie site for a bit? And I went to Scotland (Todds forum) and a few other places spreading Mountaineer love. :(
I sure hope I can find a way to post this forum page as Sir don't allow links at all on that forum. The other places are a cinch though.
Maybe the puter gods will shine down on ya and Dorys heart will last a few more weeks until all this mess gets straightened out. I sure hope so.
pssst..in potentia if sales increase dramatically do I get a discount on my next tipsy attack? :p

I hate Windows 8 too...it is the absolute worst...I have it on my tablet and I hardly use the dang thing because I can't stand 8...give me Windows 7 anyday! Hope Dory will last you long enough to get what you need and maybe even find a computer with 7 on it...they are out there, you just have to pay more to get one with it!

Well, Kayte dear...just keep posting tips here, and I bet you will keep selling them, while your web page is getting sorted out.

I've got windows 7 on this box, and shudder to think of adapting to yet another upgrade (?) of OS in the future. Been around computers since I was a tot with a card punch machine as my babysitter, and I tell ya, it's long since gotten REALLY OLD learning about software over and over again every couple years!!! But the toys I like to play with stop being supported with updates after a while, and if they break I am once again doomed to spend my life feeling like a complete idiot relearning how the wheel is supposed to be round *this time*.

I'll be happy to take a few shifts on the short bus as driver! Hubby's been teaching me to shoot from the driver's seat and I'm slowly coming up to snuff on that. Gonna be pretty tough picking out a pair of boots for kicking tail tho; I've got a closet full!

BBQ is rolling along nicely, and while the menfolk pretend to stay up all night (can hear their snores from here) I get a few hours in the sack with a cat along either side of me, free of the mosquito laden night air. (Apparently, no brisket can truly be smoked proper, without a bit of involuntary blood donation)

Dory arose? That's great Kayte! Might I recommend a back up device (just like vaping, sweets)? An external hard drive or two couldn't hurt for saving passwords, docs and pics! I have 4 running off my system. Fail safes. Even a teensy little thumb drive would work well.


I also detest Win8. What were they THINKING?? I think it's marketed to 20 year olds.

Okie dokie.... Raw Almond Chocolate Chip Cookie Dough Bites




These no-bake cookies are deeeeelish, a healthier alternative, natural, and even vegan!

These bite-sized treats feature coconut oil, almond butter and pure maple syrup, which when combined with dried almond pulp, create the texture and mouth feel of traditional cookie dough–> without any baking to worry about.

(Coconut oil, along with other healthy fats, are key to brain health and may actually boost metabolic function. Almonds not only contain additional healthy fat, but are also associated with lowering cholesterol and are a hefty source of magnesium and vitamin E. With an extra boost of fiber from the almond pulp, this naturally sweetened cookie dough is actually something you can feel good about eating!)

Ok, ready?

Makes 16 bite-sized pieces

Ingredients:

1 cup dried almond pulp “flour”
1/4 cup coconut oil, softened
1/4 cup pure maple syrup
6 tablespoons raw almond butter
2 teaspoons pure vanilla extract
1/4 teaspoon fine sea salt
dark chocolate chips, as needed (I chose Lilly's brand, sweetened with stevia)

Directions:

(The almond pulp is what is leftover after you make almond milk. If you do not want to make fresh almond milk, you can get store bought almond flour, but fresh is better, and cheaper.)

The key to working with almond pulp is drying it first, so don’t be tempted to skip this crucial step. Spread out the pulp on parchment paper and set the oven at 200F. I did check at the 30 and 45 minute mark to make sure all was ok. It was fine and done after an hour. Once the pulp is dry, you simply pulse it in a food processor to break up any clumps and create a flour-like texture. Any leftover almond pulp “flour” can be stored as you would traditional almond flour, in a sealed container in the pantry, or in the fridge for longer shelf life.



Measure out one cup of the almond pulp flour, using the "scoop and swipe" method: Scoop the flour with a measuring cup and swipe the top with the back of a knife to level off the top.

Combine the dried almond pulp flour with the coconut oil, almond butter, maple syrup, vanilla and sea salt in the bowl of a food processor, and pulse until a sticky, uniform batter is formed.



Adjust the flavor to taste, if necessary, then use a tablespoon to scoop the batter into bite-sized balls. The batter may feel slightly greasy, thanks to the coconut oil melting with the warmth of the food processor, but rest assured that they will lose that greasy texture once they have set in the fridge.

Roll the batter between your hands to form a smooth shape, then arrange on a baking sheet lined with parchment paper. Press the dark chocolate chips into each ball, before placing in the fridge or freezer to set.



I placed mine in the freezer, because I'm impatient, and I found that these were set "enough" after 10 minutes. I recommend storing and serving these bites directly the fridge or freezer for best texture.


IF you WANT to bake... as an added bonus, these little bite-sized bites can also be baked for a delicious cookie treat! They don't spread like a traditional cookie, but they do get crispy on the outside and stay soft and tender on the inside. If you keep a stash of these bites in your freezer, you will only be 10 minutes away from a freshly baked chocolate chip cookie anytime you like! To bake, preheat your oven to 350F and arrange the frozen cookie dough bites on a baking sheet lined with parchment paper. Bake for 8-10 minutes, until the cookie bottoms are golden brown. Allow to cool for 5 minutes-- they will firm up a bit-- then devour!

Lol

Those cookies! :drool: Since I never enter the kitchen "cooking" part area any more, think hubbs will have no problem with these directions. :D I have become accustomed to the "eating" area where my fish tank is on one side and the Vaping Corner is on the other and his Dell computer laptop with XP (2005) is on the table. :facepalm: Thank you for that yummy recipe and pictures.....We can't make/bake/cook/......put together food....... without pictures. :p

Oh my goodness!! I am going to make these cookies on Monday. I already have almost all those ingredients. I'll just change out the maple syrup for my agave and use dark chocolate instead. Thanks darlingkat!! yum!!!

and choo...I'll back up dale any time!:) I spend alot of time at military commands so I have my combat boots all broken in and ready to go...:D
