nasty tasting cartos: cooking juice

Sandy, if you have 20 juices in rotation, how long does a carto sit with juice in it? I ask because juice dries. Not quickly, but it does lose liquid to evaporation, thicken and crust. If it dries near the coil, then you fire it...well, it would be like beef jerky! Once that takes place, it would be almost impossible to get the taste out!
