I have started to take Rich's straight up fire-cured (whatever the hell he calls it) and adding some Lorann flavorings. The first one I tried is Captain Black. Initial impression is very good but the jury is still out. Guess what? Gotta let them steep too.
And then gotta find the right amount to add. I never want to lose that fire-cured base. I want the flavoring to simply compliment the base and keep it from being dry...not overtake it.
Damn, B! When did you start venturing into the dark side of DIY? It's fun, even if barely doing it.
Add some, let it steep for a week or two, then adjust to that same mix. Always start small. Always!
