DId you ever see what happens to a head of cattle when it tries to head but a large sheep. You have to act quickly. When cattle was slaughtered at the farm it was done in a small block building just for that purpose. There as a couple of block and tackles in there.

Never saw a cow/bull head .... a sheep.... We used a block and tackle and a large tree in our front yard. We would raise it a few feet and skin until it was down to our knees, then raise it again to continue. We did this over a plywood board.
