You don't by chance have a link to one of those videos, do you? I haven't had much luck finding any video for this online. I also need to find my pliers.The bottom one looks OK to me. The one on top, not so much. You may want to watch a few of Phil's videos--he's constantly over wrapping and then unwrapping his coils. Just fast forward through a few of them. Maybe this will help.
The idea is to keep the coil snug on the rod and then very gently start unwrapping it toward yourself--but keep the leg perpendicular to the rod. Pliers are helpful.
