I'm going to try lemon 6% with marshmallow 4%, worse case I wind up dumping it.

You may get more mouth feel in that than meringue may offer... which may throw it off...

Tell me how it goes after you test it!

After mixing my recipe I did drip some so I knew how it was off the shake. I do like it. It isn't a true chocolate as it has some cake in it. dessert chocolate leans more towards a dark chocolate but it isn't a dark chocolate like VT DC is.

On a scale of 1 to 10, with 1 being a milk chocolate and 10 being a true dark chocolate, I would rate SSA dessert choc as 4 or 5. Hope that makes sense.
