    I know I have mentioned before that dd works from home. Well today is payroll day and it's her job. I think she'd get up from her death bed to do her job. Sooooo she is up to do her job of payroll looking just marginally better than yesterday. She did have some soup for breakfast which is a plus.

    GD invited us to the zoo last night for a Christmas family special. Her new husband was there and GGD, along with GGD's father, his current wife and their 5 kids. GD is 7 months down the road to her next kid. Mostly outdoors with millions of christmas lights. The animal areas were dark and the few critters we could see were asleep. It was really cold and really crowded. Their plan was to walk at high speed for 2 hours. I'm 73 so walking for miles in the dark at 20 degrees isn't so much fun anymore. It was OK for 15 minutes, by the end I couldn't feel my fingers. Today I'm staying home.

    I've been working on my blackcurrant meringue recipe. Slowly reduced the meringue from 3% to 0.5%. Decided I don't like meringue. The latest version has 0.5 meringue and 2% FA Fresh Cream. That should be ready to use in a couple of weeks, I have enough of the previous version to keep me going until then. Then I'll decide whether to remove the meringue completely. I always use cream with fruit but I decided to experiment a bit with the blackcurrant. Should have stuck with what I know.

    I like ssa blackcurrant a lot. I sometimes just mix it with 2-3% pudding base.

    Well at least you will learn somthing from your experiment. You might actually like the small amount of meringue.

    It’s still snowing lightly. Looks like we’re going out to do some shopping. I have a couple things to return also. My brother in law got me this magnetic power tool holder that’s supposed to hang off the side of a tool box but I have no room for it so am going to return it.

    Chocolate Cookie IC Sandwich with Peanuts

    FA Vanilla Cookie 1.5%
    SSA Crumbly Cookie 1.5%
    FA Cookie 0.8%
    WF Ice Cream Dark Chocolate 2.5%
    SSA Clotted Cream 1%
    FLV Peanut Butter 0.6%

    Optional: Sweetener to taste. Start low, as in 0.25% - 0.5%.

    Steep time = 4 weeks / as always, YMMV

    The FA VC, FA Cookie and SSA CC cookie base is one I've used before. Combined they make an awesome tasting cookie. It's a nice base that can be taken in many directions with nearly any flavors (fruits, coffee, nuts etc. etc.).

    WF Ice Cream Dark Chocolate is an excellent flavor. In this recipe it pulls double duty as a fine ice cream and it changes the cookie base into, ummm, a chocolate cookie.

    Clotted cream boosts the overall IC profile. It also helped in making the chocolate less "dark" leaning.

    FLV Peanut Butter is an excellent, and very realistic, roasted peanut with a light salt note. It is not even close to what I would call a "true" peanut butter flavor.

    I mixed two 10ml versions of this recipe. One minus sweetener. The other with 1 drop CAP Super Sweet. Both are flavorful. The one with CAP SS is a wee bit sweeter, but it's not something I would call a "sickly" sweet. It's just the right amount for my tastes.

    This is a delicious tasting IC sandwich. You get the chocolate cookie profile out front, a very creamy ice cream in the middle and peanut on the backside.

    Note: A "blond" cookie version of this ice cream sandwich can easily be made with one or two subs. Pull WF Ice Cream Dark Chocolate, then sub 2.5% SSA Ice Cream or 2.5% SSA Ice Cream Vanilla. Or use them in combination, with one at 1.5% and the other at 1%.
