I am sure the flavors for DIY are different then "IRL" fruits.
I agree but would also say yes and no. It all depends on which flavors by what company. Flavorists know all the compounds in every food item known. There are extensive databases with that info. They use that info to create the flavors we use. Some companies fair much better than others in the realism department.
Take strawberry for example. There are ~400 chemical compounds in a fresh strawberry. There is one strawberry flavoring that easily stands far above all others. MF (Medicine Flower) Strawberry. It's my favorite s-berry flavoring. I call it the Queen of Strawberries. It truly tastes like the fresh ripe strawberries we would
buy along the side of the road in California.
MF flavors are very realistic. They require a solid 4-6 weeks steeping. You only need to use a few drops in a 30ml mix. They are very ultra concentrated flavorings.
Flavour Art prides themselves on realism with their fruits as well. Their two strawberries, Strawberry (Red Touch) and Juicy Strawberry, used together in a mix also create a very realistic tasting s-berry.
