One veggie that DH cooks down for hours is "soul" various tough, leafy greens with salt pork or fatback. He does a "mean" pot of collard greens that could compete with any granny's pot. The other night I steamed some PicSweet frozen chopped mustard greens with turnip pieces and added only a dash of ButterBuds and nutmeg when steaming. DH thought they didn't have enough flavor. I guess it takes a real cooked leafy green lover to say that about any cooked greens.

Last time we did a bird in the oven, we cooked it with a rosemary-pear stuffing inside, so our brine for that bird was salt, apple juice, white wine, and rosemary. We also stuffed butter under the skin before throwing the whole thing in the oven.

It was ungodly delicious. So moist. So flavorful. The leftover meat carried the flavors well too, I still look back on those sandwiches with fondness.

After talking about it now I'm kinda sad I won't have any leftover action (because I'm not hosting this year). I may need to do a bird of my own soon.

Don't know if I will brave another trip to the grocery store before Thanksgiving. Definitely tucking the idea away. White wine basting and rosemary butter slathered under the breast skin is already in the plans.
Definitely making a leftover pie, too!

I've ca:laugh:lmed down a bit now... Jack's story helped..

The man was here to take care of the mold issue, but not till about an hour ago. All he did was caulk around the toilet, said the sub floor wasn't damaged, maybe the landlord would put in an exhaust fan, but someone else would have to do that and someone else would have to replace the subfloor ( contradicting himself which he did all the time he was here) because he's not qualified, tho he's a licensed contractor/carpenter. Then he tried to say there was no mold, just condensation. oh, and the landlord said to tell me to just open the bathroom window ( which is a regular sized window right over the tub ( with wood trim!) whenever i took a shower or a bath.......in the middle of winter! So I'd be standing there buck naked with hot water raining down on me and cold, or really cold air blowing on my naked body!!!!!
Oh, and somebody licensed would come put in an exhaust fan.( but he's a licensed contractor/carpenter), or maybe someone would, or maybe the lanlords boyfriend would, maybe this summer ( they live in Missouri)
So sorry you are going through such crap, Kay. :mad:

When we consumed a lot of peas they were exactly that. And no other would do!!! Except for the big crisps really green ones with pearl onions for holidays.

We stopped doing peas much at all when we jumped totally into Atkins diet over 10 years ago (<20 grams of carbs a day for a few months). There's just too many carbs for the few nutrients especially if one likes many other veggies. Now days we rarely do a lot of high carb veggies. BTW... a nice substitute for white potatoes is yams/sweet potatoes and sweet potatoe fries (but baked). More and more restaurants are including those, without frying or plain now days.

Atkins was brutal!!!!! That's when we started calling DH the "carb natzi." He still is today but quite a bit less rigid.

My saint of a father didn't like broccoli, either, or squash. We girls loved those and many other veggies he didn't like so we always had several veggies with every dinner. To this day the plate seems lacking if there aren't at least three veggies. (I was a vegetarian for a long time... not vegan, though. Back in those days I could do wonders with legumes.)

Gotta have soft, white, sliced bread for turkey sandwhiches; turkey slices, lettuce, mayo, cranberry relish, and lots of pepper. (To make it totally perfect Miracle Whip.) When I told DH I was getting a loaf of WonderBread he hestitated and then said, okay if you must. He doesn't want to fess up that he wants that. (I didn't get the WonderBread but did get fresh baked, sliced white bread from Sprouts. I'll get brownie points for that. My gluten free breads are really stiff.) Granted we will eat some of the soft sour dough and wheat dinner rolls, with grass fed, unsalted butter, that come with our store prepared dinners, but the Bubs get most. (I've mentioned grass fed butter. It is especially good and spreads more easily than grain fed cow butter. Has lots more nutrients, too, and much less bad fat.)

i do also like salads of lettuce and raw spinach as long as there are fixins like ham or bacon cheese and eggs on it.
also love hot peppers of all types but bell peppers are gross

Well there. There is some hope for you broccoli/cabbage haters, after all.

:laugh: I make myself hungry all the time. I think about food a lot but don't always follow through to prepare or eat.

I was blessed/cursed by having gall bladder removed at age 21 after turning yellow and getting down to 90 lbs. (I was seriously lean at 110 lbs when I was modling.) Last weeks before friends literally carried me to ER I couldn't even keep water down much of time. Any gluten would set off a major attack that made me want to kill myself. Back in those days munchies needed to be taken care of with Chocaoate Chip Cookies that always got me into trouble. (No stones but seriously malfunctioning.) Also, life long irritable bowel. So, most fats and sauces don't do pretty in my system. I can smell some rich sauces and have to dash to bathroom. My body just works better with mostly veggies/fruits/berries/legumes. Much easier to live a normal life and not tied down to bathrooms or plan my whole day staying close to bathrooms. So most of my adult life I've had to be very aware of what I eat and when.

Coarsly gratted or finely chopped broccoli makes for a surprisingly yummy slaw especially with cranraisons mixed in.

Whole Foods usually has, at the salad kiosk, a mix of raw organic baby spinach, a legume (I forget), cranrasions, fetta cheese crumbles, and a light, slightly sweet dressing. It is just too yummy. I get a little extra baby spinach to mix in with it. Last time I was there they didn't have any. I think I circled the kisoks 10 times, looking for it, until DH dragged me away.

I can take or leave most mature bell peppers but stuffed bell peppers, with lean beef and rice, with not too sweet tomatoe sauce has to have big green bell peppers. That was one of my mother's favorites and all us girls loved hers. We didn't get them often as Mom only cooked on weekends. (We had a nanny/cook during the week.) Cabbage rolls with same stuffing and sauce. Only way my father would eat cooked bell peppers or cabbage. Dad had really serious irribable bowel so we didn't have real fatty meals or very rich sauces or gravys.

Those little, baby bell peppers, that we see more and more in stores (and Costco) are suprisingly non-bell pepper like. They add remarkable flavor to cooked dishes or roasted without the usual bell pepper taste/smell. Really sweet.

Growing up most of our dessert were fruit and cheese. When we did have cake it was usually Angelfood with fruit topping.

I have a major sweet tooth but DH doesn't. That helps me to keep in line.

BTW.... parents only allowed us one small sugar sweetened coke or other beverage a day. We were allowed iced tea, for dinner, with artificial sweetener (saccarin) when we were teens but I usually preferred milk. They severly limited our sugar intake. There was no history of dibetes in our family, though.
