For all the cookie lovers (even the Gluten Free). My daughter has Celiac and loves Peanut butter cookies. I have been making here these for years. She absolutely loves them.

Peanut Butter Cookies

1 Egg
1 Cup Granulated White Sugar
1 Cup Creamy Peanut Butter
Optional: Chocolate chips or Nuts

Preheat oven to 350* Mix all well. Roll into 1 inch balls and place on cookie sheet lined with Parchment Paper. Use a fork to flatten each one to roughly 1/2" thick. Bake for 11 minutes. (Hotter ovens may need 10 minutes) Let cool on a wire rack.

This is the easiest recipe I have. If you can remember the number 1 you can remember this recipe.

Hey even I could do this. Is it possible to replace the sugar w/ stevia (I use stevita granulated)?

Hey, just saw Ed's around. I remembered reading about you loving the chance to FINALLY relax in your recliner, and this made me think of my hopes that you get that long overdue SPRING and plenty of R&R soon -

I haven't personally tried to replace the sugar with Stevia. Guess you get to be the tester on this one.

edit: never baked anything in my life so fergive the stupid question. Can I just throw everything in a Vitamix to prepare before putting on a cookie sheet?

I don't think you'll get away with putting it in the vitamix. The dough will be extremely stiff and even a Vitamix would have major problems with that. I have a kitchenaid stand mixer that I use. You could use a hand mixer for the eggs and peanut butter, then add the sugar and mix the rest of the way with a fork or your hands.

Been one hectic day!!!!!!!!!!!!!!

Neighbors had to make an emergency run out of state. Grandmother is not expected to make it much longer. We are hoping they make it in time.
The group I do stuff with found someone to watch the kids. Then we started setting things up for the meals for the visitation and funeral. It will be here since grandparent lived here until a few years ago.

It is sad. :(

And not too much forum time. :(

To be honest, I have never heard of not using flour, brown sugar etc in a pb cookie so I wouldn't know. I would think you don't have to worry about overworking any dough, because - there is no dough? So, the vitamix should work fine.

Dang, you have a vitamix? Lucky dawg.. :ohmy:

I have no idea what the mix gonna look like and thought maybe it might get tough removing it from the Vitamix. Use it mostly jus' to make smoothies :)

That's the great thing about parchment paper. It is non-stick. No spray or oil is needed and it won't burn the bottom of your cookies. You don't have to worry about mixing your dough too much with this recipe since there is no flour in it. However this dough is just as dense as any other cookie dough so it won't be easy to work.

Jus' saw that notice above, Cal thinking of banning ecigs like regular stinkies, guess stupidity in govt is universal :(

It is time for DH to retire and us to get the hell out of here. I already told him I was gonna still use my REO and if someone said it was an ecig I could just tell them "this? Does it LOOK like an ecig? It's a vaporizor!"
