This recipe called for 2 tablespoons of oil in the skillet then leaving the skillet in the oven to get it hot then pour the oil into the batter. When I pored the batter it gave a good sizzle. :) Texture was good just without any sugar is was ....blah. I'll just find a recipe with sugar but use the same hot cast iron cooking method. If I get this down I might have a chance of being your corn bread person in the bakery. I'll go by the name" Corny Laurney the corn bread man." But I'll just do corn bread, nothing else..no register, no talking to customers, no clean up. I think I'll need an assistant too.

The first problem with your recipe is that it uses oil. True cornbread uses LARD. There is something to be said for pork fat. As an aside, I happened to be at a Grist Mill a while ago. They had popcorn meal along with their corn meal. It is amazing how good cornbread is with popcorn meal. It is naturally sweeter, as the popcorn is sweeter than the regular corn. The back story behind it is that during the Civil war, the yankees would go through the fields and take the corn. However, they would not touch the popcorn, so that was all that was left for the southerners. So, they made cornbread, etc. out of popcorn. If you ever get a chance to try some, do not hesitate. I think it is 10 times better than regular corn bread. Course, when I cook it, I make sure that I have plenty of Amish Roll Butter to slather on it fresh out of the oven. Also, when I was growing up, Sunday dinner was (a lot of times) left over corn bread crumbled in a glass of milk.

Good evening, everyone :)

Just called it a day...I'm tired and I'm making stupid mistakes now so I've shut the programs down and will resume my work in the morning. This cycle sucks. Lost so much productivity over the weekend due to power outages, I feel like I'm playing an endless game of catch up. No birthday celebration as a result and I feel as though I let my husband down. :( I know he doesn't hold it against me, but I just can't help feeling maybe I should have just put off today's work and just work a bunch of 18-20 hour stints for the rest of the week.

..with twelve pics of him in the lounge?!!!! and praising him to the skies?!!! I think you made him feel pretty damn good!

Dennis, that is so wrong. 'Sin' taxes, Tobacco taxes, liquor taxes, gas taxes... all for Our Well- Being ! Until something threatens their tax revenues, that is....

I heard that sometime next year there'll be a national breathing tax....

I quietly (no coughing or wheezing) celebrated my 3 year anniversary being smoke free on Jan. 8th. Jan. 7th, 2011 was the day my batteries and charger finally arrived so I could start using my Grand.

Lauren...ask beg or coerce JCOkie for her recipe...it's to die for! i normally don't like cornbread, too dry, but hers is superb...

Congrats, Karen! Our lungs are mostly pink and squishy again! I haven't lost my enthusiasm for Reos. It's just that as my kids get older, I find I have less time to play in Reoville. They're 15, 9,and 4 now and they don't give me a moment's peace! :D
