I just put some stuff in a crockpot for Thursday's dinner. It is sort of a chicken strogranoff, but I used plain full fat yogurt instead of sour cream. Supposedly, the yogurt enzymes keep the chicken breasts (not to be confused with those Pietro was wanting to watch smash) from drying out. If it tastes like crap, I always tell my brothers 911 pizza is always an option! It was pretty easy, just mix 16 oz yogurt, 16 oz chopped mushrooms, 1/2 cup of white wine (I always use vermouth a la Julia Child), a can of mushroom soup, half an onion, chopped garlic, some pepper, and I used a pouch of buillon concentrate. Then pour it all over boneless, skinless chicken breasts (mine were the frozen tenderloins from Costco of course!) and let it cook for 6 to 7 hours on low.
I plan on serving it over baked potatoes instead of noodles because DH decided the 2 of us NEED a huge bag of russets from Costco. I am also the proud owner of more red delicious apples and yellow onions than we can eat in a month if anyone has any ideas on how I can use them (as long as it isn't pastry, my niece has the monopoly on that).
