I am very popular tonight in my household. There are two birds behind me, pigging out on spaghetti with pomodoro sauce and shredded parmesan.

One of my past BFs once cooked the most delicious spaghetti dish for me that I've ever tasted. He called it Burnt Spaghetti. The way it was prepared was by verrrrry carefully charing the butter until it was a caramel color and then pouring that burned butter a little garlic and freshly grated parmesan over it. I've looked everywhere, but I can't find a recipe for it - dont even know what words to search for. Cant call him and ask him b/c then he'll trick me into coming over and making it for me.

If anybody has heard of the recipe and would like to share it, I would appreciate it!

Could it be a variation of "beurre blanc" such as beurre noir?

ETA: Was he Greek. If you google Spaghetti Beurre Noir, you get a lot of Greek recipes.

Yes, Poeia, he was 100% Greek - last name Markopoulis. He cooked a lot of domathes and moussaka too.

Yep, that's is ClassWife! I got a craving and made some tonight, but used Parmesan instead of the mizithra b/c that's what I had in the fridge. I'll have to go to Trader Joes soon to get the mizithra, b/c it makes a big difference. Thank you!

p.s. - I love garlic, so I added some. Added it too soon, though b/c it got too browned. Need to add it after turning off the burner.
