No I mean red potatoes, french fries are usually white potatoes.

Your store will have bags of red and bags of white potatoes.
Any new potato makes poor fries, to much water and not enough starch yet.

Not a fan of Red potatoes as fries, though they do absorb flavor better in stews.

White potatoes, thick cut, lil skin is good, deep fried & served with chili, cheese and some sour cream on the side.

I'm more for the caramel toasty effect that can be brought from the more sugar latent yellow potatoes myself, a cocktail sauce type mixture light on the horseradish for dipping which makes the steak happy too and to go one better, sweet potato fries kick the other tubers to the curb IMHO.

Mmmm stews, call it a sin but I can do me some morel mushrooms in a beef stew. Hehehe

I'm ignoring this thread anymore until I find my drool bib!

a well made deep fried Tater tot can give a fry a run for its money.

This simple statement merits more discussion. It is very true but understates the case.
Somebody start a new clone vs. Authentic genre thread. Tater tots need not get muddled with the likes of french fries , pizza, and absurd gravy conspiracy.

Their real name is chips and they were invented in England. The French don't even eat them. They think they are only fit for barbarians who don't understand real food, like the English. No idea why Americans call them French Fries.

Some of that last paragraph is true.
