In the world of REO, that we merely live in, I once knew there was more! What else are we into?

Mine doesn't like beer either but she knows me well enough to know I'd like doing it so she bought my first starter kit. Lol and she got me my first e-cig.....wow she really is the best woman ever! lol. Now if she'd only known how much more I would spend once she got them for me she might have rethought it! lol

She does however like a beer called Lindemans their Lambic's at least. I wouldn't dare try making one though one the wild yeast are hard to get rid of and could infect everything else I make and two they backsweeten their beer which is really hard to do on the small scale. But if your lady likes fruity stuff she might like them as well.

sooo.... have you pointed her to the classies? :)

That's awesome mate, she sounds like a good find. So with the wild yeasts, how do you encourage their growth? Fruit peel or something? I would be game to try it. I like my packets of s04 or the half decent ale yeasts that come in the higher end cans.

Lol that would probably be a good plan. Maybe she can watch for me and I can end up with a fantastic Christmas present. Although our 2nd daughter is due Jan 2nd so if she's a few days early I might get the best Christmas present ever! She had our first daughter 6 days before my b-day I told her then if she waited til my birthday she'd never have to buy me another present. I'd say that's a fair offer for this one on Christmas to! lol

We can buy them here from Wyeast. Not sure they would survive the trip to you. But you might check if there are any breweries near you that make a lambic. I have two breweries near me that will give me yeast skim's. They tell me what day to be there and I bring a big mason jar sanitized and ready to go and they fill it up for free. They're just going to dump most of it anyways so it doesn't hurt them any. But there is a technique for attempting a wild capture yeast and it's open fermenting in a shallow trough. Keeping the wort only about 2 to 4 inches deep and letting it sit in open air. Problem is you won't know if you actually have a viable yeast until it's to late to do anything with it. And the only way to tell when it's done is taking daily hydrometer readings to monitor fermentation.

I think I need to master balance in my brews before I take that step. I'm on the equivalent of a ego, with a clearo in comparison. Haha.

Yeah brewing is most definitely a art that is slowly perfected. Patience and working up through different variations of brewing teaches you a lot about what each stage does. You can learn a lot from drinking different kinds but making different kinds then modifying the recipes to find out what each change does is the biggest learning experience. You might also try doing some SMASH (single malt and single hop) brews when you finally decide to go all grain to learn what each of their flavors are individually.

Good advice, cheers. I have been taking my time with it. It's a great hobby. I'm going to buy beer anyway, but making it is a little cheaper and heaps more rewarding. Haven't done a trip to the bottle shop for ages. But the home brew shop, that's another story.

I still have my favorites that I buy because no matter how close I get to making a copy it's just never quite the same. Probably the water they use being different. But yeah it's fun and in the end you get beer! Doesn't get much better then that! lol Well I'm off to bed. Got me started talking about my fav subject I lost track of time. Anytime you want help with a brew feel free to shoot me a PM I'll gladly offer what advice I can.

since i'm guilty of helping hijack this thread, i'll do my best to help get it back on track....

i'm a pretty boring old fart. thanks to age and various illnesses, i gave away or sold all my guns and motorcycles. i'm also terrified of needles, so have no tats. but...

the top bike in this pic was built by my son-in-law (buy the mag to see better pics :) )

my older daughter recently bought a bar that i'm very proud of (shameless plug)

my two daughters are pretty much my entire life. my baby daughter is a minor and i had to discourage her from posting pics of herself online, so i won't go there. my older daughter has appeared several times in various magazines, however. here is one taken in her kitchen, which she designed:

other than that, i'm just a retired hardware/software engineer who likes to buy Woodvils. i haven't written a program in several years, but one of these days i hope to complete the project i started a while back :)

Programming - My commodore 64 + 4 came with a book on spreadsheets and a book on basic (I wanted it to play games, but my folks didn't understand that and never bought me any games). When I was 12 or 13, I had zero need for spreadsheets but did require a method to create my own games. So, that basic book got worn out and ended up creating a monster that lived another 25 or so years. I got burned out though. I still occasionally need python because of the operating systems I choose to use for a lot of purposes, but I'll never again have a deadline or spend another minute of my life in a cubicle.

I had a Commodore Vic 20 that my parents bought for me. I later bought a Commodore 64 with money from my paper route. I had to Google the Commodore Plus/4, as I had completely forgotten about it. I can remember getting Run magazine and painstakingly typing Basic programs in and saving them on the cassette drive, since I didn't have the floppy drive accessory.

I don't have many of my photo's to post from this PC but I'll tell what I can. My job keeps me pretty busy (see avatar). But when I'm home it's family time first and beer brewing second. I brew all my own beer. More because I like to experiment then drink although my friends love the benefit of free beer. I love Belgian beers and most are pretty expensive so making my own I can clone about anything you can buy. I also fish everywhere in the country that I can park within reasonable walking distance to water. And I like most you have a few tat's and always want more. That's about it in a nutshell.

Goose Island Nut Brown Ale is my favorite beer on the planet. Goose Island, in their infinite wisdom, decided to stop regular production of it. I'd love to be able to clone it. :D

One of my sister's ex-boyfriends recommended this one to me: Framboise lambic - Lindemans Brewery - US Beer Importer Official Site

Tasted like the raspberry syrup at IHOP, to me. Blegh.

You got me thinking.... (Might have been the wrong thing to do.) My one and only college course I taught was on computer programming. The computer we used was similiar to this one. The problem with this computer was that you entered your code into the computer through flipping toggle switches and using machine level programming. That was a fun class.

Yeah it's very strong flavored. Although there's a bar near me that mixes it with Hooegarden (sp?) And calls it berries and cream. Mixed that way it's actually pretty good.

I tried it at great local wing place, they also serve it with half Guinness, they call it a Black Raspberry, and it overpowered the Guinness. Maybe I'd like it with nine tenths Guinness. ;)
