Building in layers, is much more tedious/slow, than throwing it all together from the get-go. The main advantage, is it becomes much easier to identify what might need to be changed. Being able to put a finger on whether something specific is too much, not enough, or maybe just not the right/best concentrate (for the mixer's preferences); simply becomes much easier (and faster?) to identify.
I have also noticed that a lot of the "Big" boys & girls of the DIY world tend to mix this way. Is it right for every DIYer? I highly doubt it. I could see a lot of the fun, and spontaneity, going out of the process for some folks. And, in my mind, enjoying what you are doing, is three quarters of the battle.

Again, this is his my opinion; but I think, the more familiar we are with our ingredients, the fewer abject failures we are likely to create. SFTs are boring, and often a PITA, but I find them most informative.
