We had Philly Cheesesteak quesadillas with leftover potatoes. Not healthy but for one meal, no biggie. Uggg except we had hot dogs last night :lol: ok, so the rest of the week will be healthier. ;)

We have some shrimp in the freezer/lemons in the fridge and I was thinking about making shrimp scampi. :w00t:
Sorry your sauce was oily, Dale.

Still had the beef in the fridge that we were going to use for the ziti. So I have meatballs in the oven to put in the freezer.

    Did you know I’ve never eaten a philly steak sandwich? :laugh: Never wanted one either.

    I don’t like shrimp so use chicken.
    While I’m not a huge fan of steak. I do enjoy a good steak sub. Something about it being thinly shaved. Texture maybe. But I do like steakumms also. :facepalm: I love mushrooms, onions and cheese. So as long as the steak is thin and on a sub roll, yum.

    I also am not a huge fan of cooked shrimp. It tastes like bologna to me when it’s cooked. :?: I prefer it cold with cocktail sauce. But I thought if I made the scampi and added the shrimp in at the last minute it might not be too bad.

    I’m weird with textures. :rolleyes:


    Yasssss! Work tomorrow. I feel like I got nothing accomplished the last few days. :yawn:

    I’m sure I’d like it just fine but there’s usually something else I prefer ;)

    I too have a texture problem ... that potato soup I made for example o_O Thank goodness DH likes it :laugh:

    No idea where my time since Friday has gone, I sure haven't accomplished much, but here I am now. :)

    So, I thought I'd update you on what's going on at work.
    I'd mentioned that the service manager there was clearly sick.
    I feared covid...it's not.
    He went in the hospital Sunday, he has cancer, and it's bad.
    He's prob not got much time left.
    He's 59 or 60, married for 40+ years, two adult daughters, 3 grandchildren who adore him.
    He's also one of the top, key people at work, and quite frankly, I just don't know how this will work out, but I suppose it always does.

    Any prayers or good thoughts for them would be most appreciated.
    Sorry to bring sad news, but thought since I mentioned it, I'd follow up.

    Other than that, I went it part of the day yesterday, then worked from home the rest.
    Working from home again some today because I have a lot to get done, spring is always so busy.

    Made a fantastic beef roast Sunday.
    I think I'd mentioned that Univ. of IL sells meat from their Ag program, DH got in on a purchase when that opened up a couple weeks ago.
    It was really good...we're still working on the leftovers.
    We had grilled burgers on Friday night from the bundle, those were awesome too.

    Sounds like everyone is maintaining, so glad to hear that.
    Joey, you've been in my thoughts for sure, even before reading back.
    Hope things stay good at work and that if that person is sick, I pray there was no spread. :nun:

    Hey Lori, I was taking a bath. NCIS is rerun I remember and didn’t care to watch again.

    We have severe weather starting about 10 p.m., radar looks bad. Praying we keep our power. And hoping the same for my friends in Arkadelphia.

    Good morning, and thank you Sara, thoughts and prayers are much appreciated!

    We did have a tornado warning alert, got the "take shelter now"
    pop up. But the radar indicated storm with rotation was about 6 miles N of us.
    Generally when it's radar indicated, there hasn't been one, but I haven't checked the new yet.
    As far as I can tell we only had thunderstorms and some wind.
    Hope no one else had bad storms.

    Have to work for awhile this morning, then will be working from home after that.

    I’ve managed to kill two egos in about a months time :w00t: guess I need to slow down on the vaping and recharging them. :facepalm: To be fair, they were about halfway through a year of use.

    I’ve been busy for once. Broke down a top .... into steaks, roasts and stew meat; got the dishwasher and washing machine running now and taking a coffee break.

    We had some t-storms here yesterday and today is cloudy with rain.

    Sara I have a couple of joyetech ego mega mods if you want them. I used one a few times and didn’t like them. Let me know I will send them to you ;)

    Not happy with work they are not being transparent about people being sick at work. Rumor has it 3 people being sent home for two weeks before they can come back.
