I put everything in a huge bowl and use a mixer to blend it all up. The stick of butter is better put in when it is soft too. It is pretty creamy. I do add some of the juice from the canned yams to get it a little more moist than mashed potatoes.
Pineapple is done by itself to reduce and then added. By then it is nice and caramelized. I just started adding the pineapple two years ago. It was good!
Things I learned today:
1) Pineapple takes a LONG time to caramelize.
2) My cat likes pineapple juice. A lot. He is very sneaky when my back is turned to the stove, and he really doesn't care that he isn't supposed to be in the kitchen when I am cooking.
3) One large can of sweet potatoes from the grocery store will most likely not feed 6 people. I must remember to tell DH to get me a can from costco. Like he needs a reason to go there!
4) Trying to get one pot set up to make stock once the ham is done (for split pea next week), and getting another pot started for a from-scratch soup for tonight requires a lot of slicing and dicing as does peeling sweet potatoes and dicing them for boiling.
5) Stock pots take a lot of room on the stove when you are trying to caramelize pineapple and boil sweet potatoes.
6) The dishwasher will not start unless you press the "start" button, even if you did add the detergent.
I need a damn drink!
Most of the prep is done, now I just gotta cook
