Great!! I just discovered that I've got Lima bean earlobes. The Princess has evidence in one of my pictures.. :facepalm:

I do however like Brussels Sprouts...there a troll post if I ever made one...but I do actually like them!

Me too! And broccoli, too! I finally got my husband to appreciate broccoli, but he's still adamant about no brussels sprouts... he calls them "gorilla balls". :D

Beaver Chili

~ 2 - 3 lb's beaver meat
~ salt and pepper, course ground if available
~ butter
~ 1 large onion, chopped
~ 4 carrots, diced
~ 6 celery stalks with leaves, chopped
~ 4 cloves garlic, finely chopped
~ 3 medium pototoes, cubed, optional
~ 1 can (15oz) tomato sauce
~ 1 can (15oz) chopped tomatoes
~ 6 - 8 roasted chili peppers, remove skins and seeds, finely chopped
~ 1/2 tsp cumin
~ 1/2 tsp chili powder

Liberally season meat on both sides with salt and pepper. Place in refrigerator uncovered for at least two hours.

Remove meat from refrigerator and place on counter for 20 minutes. Cube meat into bite size pieces.

In a large skillet, pot or dutch oven, melt a little butter. Saute the onion, carrots, celery and garlic until semi-soft.

Add the meat and cook over medium heat until cooked through.

Microwave the potatoes until semi-soft. Don't overcook.

To the meat mixture, add the potatoes, tomato sauce, chopped tomatoes, chopped chili peppers, cumin and chili powder. Stir together.

Bring to a boil then reduce heat and simmer for 60 - 90 minutes. Add a little water if too thick and not fully cooked.

Serve and Enjoy!

:lol: You are using that picture for Halloween. Must have been a heck of a flash. I like broccoli, especially with hollandaise sauce. Yum.

Yeah that pic got a tiny bit "flashed out"... but then I decided it was good for the "goth look"... my skin isn't really ANYWHERE NEAR that white! I'm one of those ASTRONOMICALLY rare redheads who tans! :shock:

I like broccoli cooked just enough to be tender, with garlic and butter, and then put a bit more butter on it after it's drained... yum! We had some of that with dinner tonight!

Hmm.. wonder if I can find some beaver meat at the farmers market downtown.

I tried to find a curry recipe, but no luck. It's a red meat, so I imagine it could substitute for beef.

We have a meat market here that has all kinds of weird meat. It probably has beaver - right next to the alligator and rattlesnake.


ETA: So I guess it's official. I am the only one on this thread who likes lima beans.
