Engine breaking is unbelievably intense on sport bikes. I rarely use my breaks in traffic and, unless I'm coming to a full stop I just downshift and let the bike break for me. You can drop from 70-40 in about 3-4 seconds just by hopping into 1st/2nd (1st gear will take me up to 98mph currently). The back doesn't get too offset if you have your weight set right where it should be. Also remember, the breaks on newer sports bikes (after 2002) are simply unbelievable. Rear wheels don't lock up like they used to and wrong breaks are butter soft. That combined with a tiny high rpm engine fighting against rotational energy makes for a pretty damned fast stop.
tldr: I engine break more than I use my breaks.
