So I think I have finally dialed in my pear candy recipe. The first mix was too pear heavy and just a tad too sweet so dropped both pears by 1% and added INW pitaya. Seems I dropped the pear too much so this I am hoping will be the final recipe.
Cap jelly candy 2.5%
FA pear 2.5%
Fa pear 4.5%
INW pitaya 2.5%
I like the jelly candy because it isn't as sweet as most candies so I can use a bit higher percentage for the juicy feel. The INW pitaya is perfect with the pear, just adds a light tart note to keep the pear from being too sweet yet still lets the pears shine.

I have an old bottle of yellow cake flavoring that I found. It’s from mt. Baker so I believe it’s flavor West. It is a very dark brown color and I was wondering if anyone has a newer bottle of flavor West yellow cake and if it’s a dark dark brown color? I’m just wondering if I may have mixed something else in the bottle or if it’s gone bad. I didn’t want to start a thread for this so I figured I’d ask here. Any help will be appreciated, what’s your yellow cake flavoring look like?
