Disclaimer: I have used neither of these cherry concentrates...
so this is 100% wild rumped guessing.

That said, these are my thoughts looking at the recipes.
First thing I see, is two cherries being used, and at a (relatively) high cumulative total of 3.5%
I would have chosen only one to start; and at only 1% (at the most! More likely, I would consider 0.75% as a better beginning.).
Generally speaking, the majority of cherry concentrates (regardless of brand), are more/most(?) often described as "very strong." This is why my reasoning for starting very conservatively.
Also, if this was a recipe I was
really wanting to succeed; I would have worked on this in stages.
If I
knew the cookie base was good (the WF & INW)(if I hadn't tried this particular combo; I would begin with only that); I would start with that and one cherry; and see how that performed. Then decide if the cheek needed adjustment (higher/lower, or a secondary supporting cherry). Only when
that was to my liking, would I think about adding a caramel note.
I know this is a more painstaking process. But, it offers the advantage of identifying the offending ingredient.
Note: I am assuming (based on recipe name, and current percentages used) that this was intended to have a cookie base, with a primary cherry profile, and a caramel accent. If it was to be a cookie base, with a caramel primary/dominant note, and cherry accent; I would build in
that order instead.
(Further Disclaimer: I have only used ONE flavor (INW-Biscuit) out of the 5 you have chosen... so this is REALLY being pulled out of my rear.)
And, for this recipe:
Again, I would at least halve the cherry to start. ).75-1.0% seems safer(?).
Also again, if I really had interest in this working; I would build this in layers. Get the custard base correct first. Then, tweak the coconut note (since that is incorporated as part of the custard). And, only once that is good, would I start including the cherry.
(Final Disclaimer: Like the previous recipe, I have only used ONE flavor (INW-Custard) out of the 4 you have chosen. )
You mentioned mixing up cherry SFTs at the same time you made the above recipes. But, you didn't say what you thought of them. Did you try them? And, if you did; what did you think of them?
