Sara, there are a couple/few that I definitely want to try.

The following is a Pork Carnita Slow Cooker recipe from DH's sister. I've had it, and made it, it's very good!
In case you get tired of chicken. It should be pretty versatile too.
Pork Carnitas:
Pork shoulder (3 ½ to 4 lbs) roast (can use with or without bone…the one that we had did have bone in but I’ve used both)
1 can of beer (use a lite style beer like Coors lite or Miller lite).
½ bunch of cilantro chopped (keep the rest to put on the pork tacos)
1-2 whole jalapenos (if you want it hotter, use 2 and poke holes in the jalapenos)….I didn’t put holes in them
2 crushed garlic cloves
salt / pepper on roast
Cook on high for 4 hours (or until easily falling apart) or low 8 hours
Shred pork. Serve with tortillas, chopped tomatoes, red onion, avocado, cilantro, lime
juice squeezed over top, then sprinkle kosher or sea
salt on it. Can also add cheese if you want.
That’s it! Very easy and good.
The alcohol will cook out, so no worries with littles.
Bobbi, sorry to hear it just didn't work out, but hey, at least you tried and hung in there for awhile.
