I agree, Dale, definitely going to take some time to get to a new normal.

Well, dinner was a bust :oops: The roast was nasty dry (round roast), the roasted red potatoes were too salty despite following the recipe, carrots may or may not have been salty but I’m thinking it was my tastebuds after eating a few bites of the potatoes. :lol::lol::lol: The only thing that turned out was the cauliflower.

Oh well, I figure the average of tonight’s dinner and last nights should even out, calorie wise :laugh:

    ravioli just wasn't cutting it....and sitting here eating almost everything I have the past few days but still starving....

    omg my stomach is over here making all kinds of noises :lol: inhaled 2 slices and my stomach is like omg yes give me more :lol:

    though in hindsight kind of wish i'd kept with the marinara sauce....out of habit i put garlic sauce because I don't really care for tomatos and too much it'll break my mouth out but :glare: just not the same without the sauce but good enough :drool:

    yeah, how do you fix salty potatoes? Add more since potato absorbs excess salt? So the little cubes of potatoes are fighting over who can get the most? :laugh: We ended up tossing them since it was only 2 potatoes total that I cubed.

    oh sure Shad, order the pizza *after* I go to bed with a rumbling tummy. I would have been over to help you eat it :lol:

    Turkey burgers and air fried frozen fries today. Now that I can’t mess up. Lol

    ‘We’ll probably have 15 bean soup, cornbread and pork chops for supper tonight.

    Oh my!! No cornbread either? o_O To be fair I’ve only made/eaten it a couple of times. :lol:

    Better to have too much than not enough if things go south.
    Yeah well I ate some with my beans tonight and it was pretty good ;) A little afraid DH may blow the house up tonight since he ate so much :eek:

    Did someone say cornbread? Here's one of my favorites.

    1 1/4 c. Corn meal
    1 Tbsp. Sugar
    1 1/2 tsp Baking pwdr
    1 tsp salt
    2 x Large eggs, beaten
    1/2 c. Bacon drippings (whadja expect, health food?!)
    1 can Cream style corn
    1 x Yellow onion, diced
    1/2 lb Sharp Cheddar cheese, grated (I usually use a full pound)
    1/4 c. Pickled jalapeno peppers, finely chopped (seeded and deveined if you wish to reduce the fire a little bit)
    1/8 c. (1 small jar) pimento (for color)
    2 x Cloves garlic, squeezed through press or possibly otherwise finely mashed

    Mix above ingredients in order of succession, dry ingredients first, then add in the rest. Mix only until moistened. Don't over mix. Pour into well greased and floured baking dish. Bake at 400-degrees for 35 min.
