The boy finally got his truck last night and he's thrilled! I'm happy because no more sharing my vehicle with him! :D

Lamb Vindaloo in that. She uses an instant pot too! :laugh:

Awesome, thank you :) That reminds me, I ordered my instant pot mid week and made my first roast in it tonight. It was good, but a little tough. I used a top round. The recipe said to cook it for 70 minutes. We let it rest about 15 before we took it out. :(

    The weather behaved for us today and we didn't get rained on :thumb: Sure am tired though, it'll be an early night for me but that's okay as the time changes anyway ;) Oh, and we'll be dropping below freezing tonight too o_O

    Just got back,I took the kids to Rolla for Mexican :D:drool::drool::drool:

    I hear ya, I'm going to try to get to bed earlier too.

    I'll try #3, not sure what it is, but it looks like it has a custard, or cream cheese type filling of some sort and strawberries, so that works for me anytime!! :banana:


    Heading off, not sure if I'll be back or not, may watch a movie with DH.

    I haven't tried the Butter Chicken yet, but it's on my to-do list :D I'm going to get all the stuff to make Saag and then the Tikka Marsala first. But it's all really good stuff. The hubby went Vegan a couple months ago to get his pre-diabetes back in check, so cooking a ton for just me has been a challenge - freezer space wise. But I'm managing. I just can't give up the tasty animals. LOL

    Every roast I've done, I set it for 90min, then let it natural release. That will ensure it's cut with a fork tender every time. I put all the veggies in for the last 6min so they are soft but not mushy.

Do you open it up, add the veggies, close it and just let them sit without turning it back on? Sorry for all the questions. First time using any kind of pressure cooker. Lol

    Happy to help with any questions I can answer. Yes, I think it didn't cook long enough. Generally I have a 2.5 to 3lb roast (doesn't matter the kind unless you get into venison, elk roasts, etc.) but 90min on high pressure, then yes, I hit the off button, do a quick release of the pressure, pop in the veggies & reset it for high pressure but only 6min. Then let it naturally release which continues the cooking time of the meat. I have had a 3lb roast take up to near an hour on the natural release just because of the size of the meat.
