That's not gumbo, don't care what they call it. Didn't look at the directions, but 15 minutes of hands on time? Means you don't make a roux shock means it ain't real gumbo.

Her's has a roux, and it's quite the elaborate process...stir until your arm falls off, she says in the book.
I think she says in her book also says if you screw up your roux, START OVER...

Yeah, three tries, but it was my first time. I had a good teacher though, learned how to do it last weekend from someone with Cajun background.

It's been awhile since I read the book, but I think she was a formally trained chef.
She used to work on yachts as a chef.
I just looked at her recipe, her roux takes 25 to 35 minutes it says...she says that gumbo "can, and should" take all day to make.
I know you like to cook, if you can find a good used copy for cheap on Amazon, check it out, I bet you'd like it.
Several drink recipes in there too.
ETA: I guess she's re-released it with some updates.
Now look for "LuLu's Kitchen", it's also available on Kindle. :)

I enjoyed it, but I'm a *chick*, a guy might not *as* much, but I know you like to cook, and there are some really good looking recipes in it. :)
Did you see my edit regarding the updated version of it?
Prob just so they have something new to sell in the gift shop at the restaurants, it's a bit of a tourist trap kinda place. ;)

Well, I think both you AND OBG like good food, so cooking is kind of a must, unless you have deep pockets for really great restaurants.
We hardly ever go to restaurants unless we're traveling, my DH loves to cook, and he's much better than most restaurants around here.
    So, we eat at home.
