    Definitely a lot of work. I made balsamic chicken with mushrooms and thyme for dinner on Sat, it was really good. Tonight we had BBQ chicken tostadas. They weren't too bad. Lots and lots of roasted veggies. Turkey burgers are on the menu this week and leftover lasagna.
    How's your son dealing with the new menu? :?:

    I'm sorry I mentioned it. :( I feel bad now.

    He likes the shredded chicken and most of the veggies. Mashed cauliflower not so much. You should have seen his face. Now, he knew it was cauliflower and not potatoes but he's not a fan...at...all! Lol. All I ask is that he try a little of what we make.

    I can understand that :laugh: I like cauliflower but I don't want any mashed.

    That's good. Some things he'll grow into, and some he'll prob never like.
    I absolutely hated cottage cheese as a kid, as I got older, I loved it.

    You shouldn't be :) I had a good long run ;) It just progressively got worse.

    I was shocked to see the serving of the corn tortillas was 3 and it was only 10mg of sodium. Way better than burritos!
    How did the sugars compare??

    DH's mom makes really good sauteed cauliflower. She nukes it till it softens some, then sautes it in butter, then grates Parmesan cheese on it, with some panko bread crumbs. The parm melts, and the bread crumbs get toasted....it's really good.

    How did the sugars compare??

    3 grams of sugar. I'm not sure what the flour or wheat tortilla shells have.

    We each had two and a side salad with lots of veggies on it.

    I make my own italian dressing now and we are going to try to make our own raspberry vinaigrette. DH likes that kind.

    DH's mom makes really good sauteed cauliflower. She nukes it till it softens some, then sautes it in butter, then grates Parmesan cheese on it, with some panko bread crumbs. The parm melts, and the bread crumbs get toasted....it's really good.
    That sounds awesome! We bought some glass noodles to try :eek:

    It was good when it was piping hot. As it cooled, I was like oh yeah no! Much rather eat it raw! With a good ranch dip ;)

    I'm not sure. The package says Chung Jung One and there is a Korean japchae recipe on the side. DH found those today while looking for no salt baking soda.
