Joey, burgers sound awesome.

We had leftover eggplant and glass noodles. Found a couple of packages in the pantry that we’d forgotten about. I see glass noodles and meatballs in the future. Then we took a drive over to the walking path and had a nice long walk. Oh....it was beautiful here today. High 50s and sun. :thumbs:
I don't picture eggplant as a good leftover item. Does it hold okay, texture wise?

I bet I do too, and I bet it's not too far off. :laugh:
I'm not even going to stitch tonight.

I bought some mozzarella filled ravioli today for the first time ever, thought I’d warm up some spaghetti sauce to go over it :?:

I've had cheese filled, but not sure what kind of cheese.
My guess would be Ricotta and something...:unsure:

    I should have said eggplant parm. DH makes 2 or 3 eggplants depending on size. It will fill ALL of our oven safe dishes. :lol: We usually send some to mom and freeze the rest in dinner-for-3 portions. When it comes out of the freezer I thaw it in fridge, add more sauce and put it back in the oven to reheat. It doesn’t look like it did on day 1 but it still tastes great. I use the extra sauce in the dish to put on the spaghetti or glass noodles. So I only have one dish to clean. :thumbs:

    ETA it’s probably not as firm but I think the texture is good.

    I certainly hope so, but I've been told that the HVAC game will make an old man out of you pretty quick haha. Hope your mouth is feeling better.

    All the food posts last night have got me hungry. I went to a local pizza joint with my best friend and we split a stromboli that has alligator sausage and crawfish in it. Good stuff.

    Not sure if any of you are beer people but I found my new favorite beer last night. 301 from Natchez Brewing Company out of Natchez MS. It's an imperial saison style ale. It's fruity and tart with a lot of carbonation and is very much not a dry beer. Makes your whole mouth water after every sip. It's 9% so it's much higher alcohol content than I'm accustomed to. Gonna have to pick up another bottle this week to age for a while.

    Doggo had me up early this morning too. He didn't sleep last night and was breathing funny so we made an emergency vet visit this morning. Turns out he has fluid on his lungs. He's pretty upset with me but he feels so bad that he wants to lay in my lap so we're spending our rainy Sunday on the couch being lazy.
