It’s super cute and there are about a dozen more on their way. Eggplant parm is definitely on the list. As well as some eggplant pizzas and pasta alla Norma. I saw a recipe for that last one on Facebook and while I love eggplant parm. I’m really looking forward to something new. Also have a recipe for eggplant “bacon”
Interesting.I totally thought so too!! Slice it thin and bake, I think. Would have to find the recipe. Then use it in recipes where you would normally use bacon. I was thinking BLT’s.
