I've been playing with a cheesecake "stone" for a while... Not completely sure the last version is exactly where I want it, but pretty good after a month aging. Will likely give it a little more time before making any adjustments... ;) Gonna use it as a Cannolli filling 1st I think... :D

Cheesecake Stone (WIP)
New York Cheesecake (PUR) 44.4%
Cheesecake Graham (PUR) 22.2%
Italian Cream (Hangsen) 16.7%
Vanilla Ice Cream (LB) 11.2%
Biscuit (INW) 5.5%

I've seen it as high as 7% in a recipe, PISTACHIO RY4-U by [ENYAWREKLAW], on ELR, as an example. Over there, the median is 3% in recipes & 7% as a single flavor. Hope that helps ya...
Thank you and yes that was very helpful

    Somewhere between here and there
My lack of patience got the best of me. NR had the brie, Italian cream, and smoked butterscotch in stock so I did a small order with them. I'll wait until labor day for the rest of the wishlist.

    Still no Gin and Tonic

I always pay for tracking on foreign orders. I just feel better knowing where it is. It could have gone to San Francisco. One of my recent foreign orders did that (when I was back home in VA.) SF's customs is slower than NYC and then it has to travel across the country to get to you. I hope you see it soon. If you don't, send them an email. How long has it been now?

    Anything I should see?
I'll let you know about the fruits Fran. Did decide on the matching lemon creams to compare long steep life for the lemons. Some passion fruit mix testers and a chocolate. Think the chocolate may be high percentage wise but I'm going with it.

    Chocolate chunks WF 2.5
    Chocolate mousse VTA 3
    Cream ooo 2
