Do you find it gunks up less with sweet and creams. I'm guessing it does??

On the spaced coil spacing front...
What works for me is i make a tightly wrapped contact coil. Then pull them apart on the rod, to like 1-2mm between wraps. At that point you push it back together and pull the legs tight again. Most of the time i end up with a nicely spaced coil.
I typically use multi strand ss, but it worked with my flat wire too.
