Having some problems with some flavors, 2 groups that seem to all taste very similar. Apricot, lychee and hibiscus all seem to have this weird sweet/rotten kind of taste. And then malted milk, strawberries and cream and another one I don't remember taste sort of dusty, hard to explain it. Anyone else noticed that and does it go away with steeping or am I mixing them too strong or what.
Apricot, lychee and hibiscus? Can't say I use any of them in any juice I've ever made. I do believe I have samplers of all of them, so that means I've tested them once upon a time. Must not have liked them either. I have used malted milk and strawberries and cream.
My take on mixes like strawberries and cream is that I would love to use this in a mix where I wanted a slight strawberry flavor note, but not as a stand alone juice. There are many many strawberry and cream recipes. This is my latest, and it's a copy of one of those "show winning flavors." I am frequently asked to match flavors in the market place. Here's mine:
Strawberry (NOT RIPE) - 12%
Sweet Cream - 5%
Vanilla Swirl - 5%
Hazelnut - 3%
Honey - 3%
Sweetener - 2%
This is a 30% mix, and I can easily taste all of the flavors in it, just as I could the original that it was matched to. May be the most variable juice out there. The Hazelnut is not overpowering, nor do we want it to be....just a touch of something interesting to distinguish from "simpler" flavorings. A lot of flavors could be substituted for the hazelnut, though, to create this interesting note, and setting it apart from others. Probably would be better with the Hazelnut Praline flavor, but, remember, this was a juice match, so that's what I did.
Speaking of juice matches, once you learn to mix stuff, a little persistence will pay off, as vendors will give you lots of juices to match (free juice), and this can lead to opportunities (or an increased work load - POV). Another thing I like to do is taste test flavors at B&M's. Occasionally, I'll run across some fun flavors that I want to make in the "Lab." Here's a Pink Starburst that is really popular with my daughter and all her 20 something friends, that I made after tasting something similar at a local B&M. Very popular on the Strip, as well:
Pink Stardust (Pink Starburst)
Strawberry - 8%
Sweet Cream - 4%
Vanilla Swirl - 4%
Cotton Candy - 2%
Sweet and Tart - 2%
Folks go nuts for this one, and you can see how similar it is to the Strawberries and Cream. Instead of hazelnut, substitute TFA Sweet and Tart, and you really do get a Pink Starburst (Pink Stardust on the Strip). If you substitute Bubblegum for the Sweet and Tart, you get a delicious strawberry bubblegum (bazooka) flavor. Change Strawberry to grape, and get a delicious grape bubble gum (bazooka). Or, keep sweet and tart AND bubble gum and make one called grape bubbleburst. All are very good.
Your juice is about to "Take Off."
