Yes I did survive covid I am not 100% but I feel pretty good and glad I didn't spread it to anyone else :thumbs:

Hopefully mixed veg is done by now, we may run potatoes and beans but it will be less machines running.

    Pork roast, mashed tators, carrots and corn for dinner.

    Totally going to freeze corn every summer. It’s so good, tastes like fresh off the cob.

    Power has been flickering for the last couple of hours. Several trees, lines and fires in the area. Can’t imagine fighting a brush fire in these winds :( Hail was blowing sideways and a thunderstorm rolled through. Crazy weather.

    I have 3 pair of work shoes I just grabbed the wrong. I put them up so I don’t make that mistake again.

    Hope the different shoes helped you last night, Joey. I used ziplock bags for the corn and froze it. We didn’t have the vacuum sealer yet. Blanched it on the cob for less than 5 min, forget the exact time and then put the cobs into an ice bath. Scraped the kernels into a bowl, loaded the bags with the amount we would eat per meal, squeezed as much air out and into the freezer. It took a couple hours but totally worth it.

    I’m not sure I would use the vacuum sealer next year, I think it would squish the corn. Unless you spread it out on a cookie sheet and and freeze it first but I could see that being a total pain. We did use the vacuum sealer with the carrots and potatoes though. Since they have a firmer texture prior to freezing.
