Spent the morning food prepping for lunches. Ground and cooked some beef for tacos for one night this week. Pot roast is cooking away. Little nervous because I can really smell the pepperoncini's. Hopefully it doesn't have too much of a kick to it. Got a walk in and now I'm going to watch a movie before I finish dinner.

    Awww I miss those days of reading to kiddo. Unfortunately, he never developed my love for reading. Glad he's not moving far away. :)

    Yes, Mississippi Pot Roast. Calls for 4lb chuck roast. Sear in some oil on both sides, put it on a plate. Add 1/2 stick of butter to pan with 1 large onion chopped, 3 cups chopped carrots and a 16oz jar of pepperoncini with the juice. Add a 15 oz can of tomato sauce and half a can of water. Add a packet of each: beef stew, au jus and ranch seasoning and let simmer for about 5 minutes. Put the roast in the crockpot and add the "gravy". Cook on high for 8 hours. Break up the meat and use a slotted spoon to ladle over mashed potatoes. It was really good, but I would use less of the pepperoncini next time. Also noticed the gravy was kind of thick when I first added it to the crockpot but at the end it was thinner and greasy. Not sure if it's because I used store brand packets instead of McCormick or what.

    Wow that’s a lot of stuff! I’m sure the difference in the gravy was from meat juices and fat. Easiest way to eliminate the fat is to refrigerate the dish and spoon off the clotted fat the next day.

    Our son still likes to read, we’ve shared books, DD not so much.She did read some as a teenager but I would imagine she doesn’t have time now. She’s a CNA and works nights.

    We got to 71 today, sunny. Tomorrow is supposed to be 68. Kiddo is sick, I think I'm catching whatever he has, just hope it's nothing like it was over the holidays. Monday had lots of downs with a few ups. I reached a couple of my goals (water consumption/steps). I'll spare you the downs :lol:

    Dinner was quick and easy. Raviolis and corn. Hope you had a lovely day.
