Since it's December I'm making pâte de coings (Spanish dulce de membrillo), not sure what the proper English word is (a quick lookup yielded "quince cheese" which sounds so... wrong

what's wrong with you guys).
It's kind of a jelly candy but the only ingredients are quince and sugar. Goes great with a cup of tea (eg lemon balm) on a cold day.
Still waiting for Evolv to bring their devices to the market but the outlook is bleak... the whole FDA catastrophe may have stopped that. Sure hope they still find a way to release to the rest of the world, would be a shame if they shelfed it.
