As a beside - for the kitchen get Victorinox.. excellent knives.
I just take my Chef son in laws cast offs... and he takes my excess mods and tanks. Thankfully shinitis befalls other groups besides us!

I have a complete set of Wusthof at home. Don't recommend. Too high maintenance. At work it's 10" Victorinox cant hurt it. 8"shun Classic, workhorse Never gets dull. Miyabi Misu santoku for details aJapanese Cleaver of unknown origin and Victorinox paring knife

Global is very to Miyabi, made down the street from each other. And the cleaver always seems to be of unknown origins, am I right?
