Just a general equipment type was what I was interested in as I do find it makes a difference in the percentage choice. But I guess personal taste buds are a bigger difference.
With that said, and your equipment, I would start at a medium range. 5% , steep minimum 3-5 days before testing for flavor strength. If you taste enough strength you can wait another 3 days to 2 weeks for the flavoring to develop some of its finer notes - if its not good already.
If the flavor is not strong enough add another percent and wait a few days to try again.. Repete if needed... If it was too strong add base to bring it down one percent to 4. Adjust from there. When your close you can go 1/2 percent up or down to fine tune it.
I'm assuming you went 7% and it was too much? 5 is a good middle ground to start from.
Some have reported that a long hot water steep can negatively affect the flavor... I have stopped the hot water. Maybe try 3 hours and let it rest overnight then try it.
