.....or it could have been the setup I was using for taste testing? Nothing fancy; usually a 1 ohm coil on an old IGO-W....meh.

Give the Arabic 1-2 weeks as a start to reaching it's final (and magnificent) flavor. However, having said that you can also start after a couple days. Enjoy!
1-2 weeks steep, Thanks (is that with cap on or off). I'm at page 156 in this thread and have read that Art likes to "Cook" his Hangsens ? I've got some more reading, and Learning to do.
Which reminds me that I need to pick up some more glass bottles. I'm still using some plastic.Cap on. The only reason I know of to leave the cap off is if there's excess alcohol you want to evaporate. If you're doing so, stick a cotton ball in the top to keep out dust, etc. And yeah, if you cook your juice you can accelerate some aging but my experience is it won't get you all the way there. I have crock pot and digital thermometer but my preferred approach is to set fresh mixes on my receiver (in metal tray) for a 3-4 days and then give a few more weeks of shelf aging. This warms at a lower temp that the crock pot -- not saying this any better or worse than a crock pot, but works fine. I generally have enough juice on hand that I shelf aging works just fine. BTW, I have first hand experience with leaching of plasticizers and use only glass bottles. Enjoy!
