Hold the mushrooms, green peppers and substitute oregano for italian seasoning and... ya got mine! (with tons of garlic)
newp for me, leave out the oregano and the italian seasoning, which is mostly oregano, and just add sweet basil!

LOL. I've only got 2 warnings since the forum software changeover.

Clearly, I'm not at the top of my game...

BTW folks...this man has a lotta flaws but try to forgive him as he absolutely ADORES chickens...especially live ones....

I think I'm getting better. Tonight, while walking, a couple of ladies (60-70)parked in a driveway ahead of me, and one got out of the passenger side.
She got to the door, and I was walking behind the car, and the lady driving started to back out.
right into me.
I stepped to the side and slapped the car.
when she rolled down the window, I informed her that I was behind the car and slapped it to make her stop.
Wished her a good evening and walked on.

No yelling, name-calling, etc. I stayed calm and did not upset her further.

Sounds pretty good, if you omit the eggplant!

Yeah, chicken parmesan!!
If chicken you'll need to cook the chicken (saute) until nearly done before assembling the dish. I would use boneless, skinless breasts or thighs. Pounced flat, say 1/4" thick, before sautéing. Remember to be specially clean with chicken due to cross contamination.

You neglected a couple important steps, preparing the eggplant. I was taught to peel and slice the eggplant then allow them to cry. Meaning let them soak in a salt water bath for about an hour or so. Rinse and pat dry then dip in an egg mixture and then fold in flour and fry in a skillet until golden brown. Now you can start layering in a casserole dish alternating layers of sauce, eggplant and cheese of choice. Then bake at 350 for 45 minutes.
When I was young in the navy I lived with a family in New Jersey while attending rigger school. Lil was the typical Italian family matriarch, shared this recipe with me. Of course she didn't use bottled sauce like I have had to do.
That sounds about right. Remember I said I had never done eggplant. Just taking some cooking knowledge and applying it to another protein.
