Always managed to plea bargain for some food. The subject actually gets serious at some point here, I think, with tales of pitiful whining and kids finding out whether it would be mom or dad who would break down first.

I'm pretty sure there was a time my sister was sent to bed without supper, and she just complied without complaint. A couple hours later mom or dad was waking her up to give her something to eat.

Mom wrong? [emoji79] Mine is never wrong, & never apologizes. Even when wrong is staring her in the face. Never says please or thank you to her kids. It taught me to be quick to do the opposite. But if I went without eating it was my choice. I just wish I could break the habit of cleaning my plate. Or at least getting smaller portions!

I can post the recipe if anyone else wants it, or pm it it if not. It's a Tex-Mex layer tortiilla, chicken, cheese casserole. Quick, easy, tasty! Mom's recipe is called George Straight's King Ranch Cassrole. Lurkers, speak up!

We do the tortillas on one burner & the meats, or whatever, on another at the same time. Just medium to low flame, straight on the burner & flip with tongs. We normally use flour tortillas. BIL & his kids are from NM so thats where we learned.

I have to use corn tortillas for everything because my Bride had Celiac disease and can't have anything with wheat (or anything else that contains gluten). I did throw some of the corn ones on the burner this weekend, though, and they were very good that way. Not as soft as when ya nuke 'em, but they seemed to have a bit more flavor with that little bit of char... I'll definitely be doing that again! :D

I'm too far behind to even think about catching up. I hope that everybody is well. After ten days of working like a pack mule, I'm home. They can call me for overtime if they want to this week, but it's not happening.

We had an S92 that was hit by lightning on the flight line, so I was a busy woman while I was at work. It's a HUGE bird. Don't know if you can see this video, but they're on here.

Love a good shredded beef taco. The ground beef ones are good but, not as good as shredded. Just saying. I actually like the Old ElPaso taco seasoning. We get the kits quite often because they're not bad and are really quick to fix (cheap too!).;)

Usually for beef tacos, I grill skirt steak with some fajita seasoning, then cut it into small pieces. Not a huge fan of ground beef tacos, but I'll eat 'em. Shredded is definitely better... but skirt steak is my favorite!

I love shrimp tacos. Fish too, but prefer those if the fish is battered and deep fried. With shrimp, don't care if they're battered or not, but actually prefer them just sauteed or grilled.

I haven't had a fried fish taco... the ones I've had were grilled. Fried would be pretty darn good, too! Still haven't had a shrimp taco, but will look for 'em next time I go to the taco shack! :D


really wish I had a gas stove. You probably know, but that's also a great way to char peppers to peel them. Just put em right on the gas flame, keep turning em. Then put em in a bowl with plastic wrap on top about 20 minutes, to steam em. Peel comes right off. Have often wondered if this would work with maters.

Yep, my Bride does that with Hatch Green Chili Peppers. Then put 'em in the food processor with some cream cheese and fajita seasoning... makes a pretty awesome dip! :drool: That might work with maters, but I've never tried it... I have grilled the little cherry maters, and it looks like the skin would probably come off pretty easy, so I imagine that it would work.

Lotsa reasons... grillin' 'em brings out a completely different flavor, but it makes the skin too tough, so ya peel 'em.

In my recent experience, there are several distinct culinary phases after ones' wife leaves for a several-days road trip with her Mom and Sis:

1. Friday - after work, bring home take-out catfish plates for self and son.

2. Spend Saturday working outside and simultaneously 'cleaning out the fridge' and snack cabinet... have 'friendly' competition with son to see who gets 'the good stuff' first. Eat peanut butter on Ritz crackers, and potted meat on saltines for the first time in a long while... hmmm, not too bad...

3. Sat. eve. - after son leaves to go jukin', eat chicken and wild rice soup, cold, straight from can... augment with beer, saltines, and vienna sausage as necessary. Then open every door and turn on every light in the house; including deck, porches and carport. Stream smooth Jazz radio off internet after turning house stereo system up to '7'... work towards organizing 'stuff' - open all drawers in filing cabinet, spread papers out on all available horizontal surfaces, drag junk out of closets, stay up too late - snacking prolifically as-necessary. Crash on top of made-up bed, lights and music still on.

4. Sun. a.m. - drink too much coffee, eat last of lemon pound cake wife left, while watching CBS Sunday Morning - then later eat brunch: tuna-in-spring-water (again, straight from can) with saltines. After another while - assess pantry, cabinets, and freezers; make grocery list so I can go buy some 'good stuff'.

5. Decide instead to ride golf cart buggy in the woods and on dirt roads.
Charging it's battery, filling a cooler, grabbing a .22 rifle, takin' off... see y'all later!

Hahahahahaha!!! Loved this, but couldn't relate... last time my Bride was gone for a couple of days, I grilled quail, fried squirrel, made biscuits, and basically ate everything that I normally can't have when she's at home. ;) I ate GOOD!!!

I have a happy story!

Got together with Geordi's breeder today. We took Geordi and his sister to Rural King for some socializing and training then went back to her place. She has 3 horses, cutting/roping horses, all in their upper 20s in years. Real nice horses. I used to ride hunters/jumpers when I was young and haven't been on a horse in many years. She was in a car accident 4 years ago and we are lucky she survived. She was real banged up with breaks and concision, but is much better now. She hadn't ridden since the accident. Last week her daughter and family came to visit and they rode the horses. So today, we saddled 2 of them up and rode in her pasture. Man, it was so good to be back in the saddle again! Although the muscles aren't there anymore, the memory is. I felt at home. We are going to go riding more in the future as we can get together.

So for me, it was a GREAT day! Back in the saddle again! :lol::thumbs::lol::thumbs::lol::thumbs::toast:

My Bride used to show horses in her younger days (before we met). Whenever she gets her strength back up enough to handle it, I want to take her somewhere to ride... there should be somewhere around here where we can rent-to-ride for a day (more like an hour or two... that would be about all either of us could handle at this point!). Glad y'all had such an awesome time and visit! :D

oh yummmm.....I bet that would be good. and with some cilantro too. I love love love me some cilantro, I even stuff the bird cavity with it, and use it in my stuffing for Thanksgiving. Sounds odd, but my niece who is a very picky eater, said it was the best stuffin she'd ever had.

You don't have to wait. Even driving a sulky would be fun. When a horsewoman wants a ride, people can get very creative. Watch this; it gave me tears the other day.

Guess I better go rinse my face before the salt from my tears gets too caked, but I'm not done weeping yet. That was so amazingly beautiful.
