There was a cleaver I saw online for $3000. No joke an old hermit on a mountain in Japan makes them.
This site has great deals on knives. They run some really good specials.

My cleaver is Old Hickory and I bought it at Ace hardware for about $15. It's sharp as hell, tough enough to split up Boston butts and the only downside is you have to hand wash it.

I think they made a mistake with the commas and points because those prices aren't monetary the way it is..
I have seen monetary amounts like that before. I think it's a European thing.

I understand. I work with like 50 other cooks aso I can check out all the knives I want at work.
Commercial kitchen vs home vs professional at home vs home shinyitis sufferer are all very different. I’ve known many different chefs; owner/ head chefs, suis chefs, home meals are very different than the stuff at work! Christmas dinner at one very prominent chefs house involved a Whole Foods catered dinner! :lol: Most professional level cookware would never come anywhere near my kitchen, sushi chef knives being the exception, they know their ..... Most holidays growing up involved a giant platter of sashimi, mom was best friends with a locally well known traditional sushi chef, I worked in their kitchen for a short time as my first job.

morning folks.
i get to work early. real early. don't sleep well. so before shift in office starts i have some 'me time' (though i still enjoy taking the phone calls of those phoning in sick! and this morning i also had the cleaner pretending they hadn't set off the alarm :rolleyes:).
this morning some of that time will be used to wind a 316L flat wire coil, bang it into one of the crius IIs and get a wickin'.

I'm a home cook but my preference is professional equipment. I don't always use it, but when I do I seriously do.

I make so much homemade bread around every holiday that my professional stand mixer can barely withstand it.. I'd go with a large Hobart if it didn't seem utterly ridiculous most of the year.. lol.

So for me it's professional all the way.. pans, knives, mixers and blenders, it's just better. But I do actually cook.. and during holidays it's for large amounts of people.

I cook a dinner at every holiday once for 80 people, once for two people, and once for about two dozen. Plus I make food baskets as gifts.. Thanksgiving, Christmas, and Easter with other holidays periodically thrown in.. nothing gets catered, and that's not even counting socials.

Stainless pots and pans are Demeyer. Cast iron pans cocottes and dutch oven are Staub. Knives are Global, blender is Vitimix, and a Kitchenaid 6500 stand mixer. My coffee maker is more hobbyist, it is the Rancilio Silva, too slow for a commercial kitchen... but brews a wicked espresso. Chemex for pour over/ drip coffee. I also have the Sansaire sous vide water circulator; commercial water circulators are out of my price range and need lol

Looks absolutely awesome.
I looked at the new B2K, only real difference is the caps have a slight cutout on the heat fin and the MTL added in. Gonna pass.

Really like that mod....if you ever tire of it...
I'll wait for a sale to pick mine up. ;)

As far as the squonker goes, Dan has discontinued the 3D printed one and he now sells an aluminum version instead.
