I agree however, if you are buying from FT(or where ever) I have found a few good pre-wrapped ss-316L makers on FT. I like MKWS and have never had problems with any of their coils. UD is good also. The problem with 316 is that it has a pretty low TCR to begin with, and small changes in composition produce relatively large changes in that low/small TCR. You can certainly use it, but if you really want to have confidence in your temperatures, you'll need to do some testing.
