Speakin' of da Gulf gifts/specialties, spent half da afternoon makin' a big batch of smoked mullet dip to share wid my fellow ramp rats down at da 'office' tomorrow...


Iffy's Smokin’ Mullet Dip

3 cups Smoked mullet – deboned and medium chop

4 oz Creamed cheese –block (softened)

¾ cup Mayonnaise

1½ cups Onion – small dice

¾ cup Roasted red pepper – med dice

4 oz Jalapeno – with juice, canned, diced

2 tbs Sweet relish

1 tbs Garlic – minced

1 tbs Chipotle flakes

1 tbs Key lime juice – to taste

¼ cup Roasted red pepper juice – for consistency control


- Place chopped mullet in CuisineArt and lightly pulse until separated.

- Remove mullet and set aside.

- Combine the next nine items and pulse blend. DO NOT puree!

- Wipe sides and bottom as needed.

- Add mullet and hand mix/blend.

- Wipe sides and bottom to completely incorporate all ingredients.

- Add last item to control consistency.

Refrigerate covered over night to allow flavor melding.

Pat, could you have your doctor ask the manufacturer if they have a program for free or reduced prices to qualified patients? My mother gets Zetia free from Merck. It was costing us a lot of money, then the doctor checked and found out she qualified for help. He does a bit of paperwork, then I fill out our part, and she has gotten it free for a couple yeats now.
I don't think they do but I will go there tomorrow and see what is on their website. For some reason I have to go to it on a browser that is not protected by Kapersky. I know there is no problem with the website but I might have the wrong address but will check it out.

No this is the neighbor who had his neck rebuilt. He's not even supposed to be doing that kind of thing. We took him some snickerdoodles yesterday to his store. He owns the local auto parts store. He's having a hard time coming back from this surgery. It's been about 8 or 9 months now. I think they had to fuse almost every vertebra in his neck. His right arm is better but his left is still bad.

Oh boy was 3 degrees when we got up got up to 14 heading for 3 again tonight.
Dang Leggs, it is really hard to like these two post. I wish there was a "read" or "dislike" button.

Gotta agree on the milk. For grits & oatmeal, too!

Yes, I have to have milk for my oatmeal. Also, I like a cup of fruit, Blue Berrys, Blackberrys, etc. in my oatmeal. Can't forget the brown sugar and honey.

Started watching a series on Exodus that I hadn't watched before. Started out thought it was kinda dumb but as it went along it got pretty interesting. We finished the first season. It's called Fargo based on the movie Billy Bob Thornton. If you start watching it you gotta give it a chance. Really not bad. 1 more season. If you have RealDebrid go to the second set of streams that are RD Openload works really good.

oh that's awful. so nice of y'all to take him some cookies. My son came up with the idea of putting butterscotch chips in snickerdoodles. Actually butterscotch and chocolate, but I (amazingly) like em better with just the butterscotch. He calls em chipperdoodles. I'm sure someone has done this, but he'd never seen it done, just thought of it.

72° with a feels like 75° here. Down to 61 tonight.

wow..........we have been a lot colder here today. 50ish in the day..... 41 now.

On a positive note, shrimp & grits for dinner was yummy
ohhhhhhhhh <whine> I've been cravin grits for a couple three weeks. Someone on another thread posted a pic of shrimp and grits that looked soooooooooo good.

now I thought I knew or could at least figger out any type of southern-ism, but ya got me on dat one! I'm assumin it's good since yur lickin yur lips! :p

I've been in contact with the doc who whacked my legs and pulled me thru my bout of malnutrition/coma. He has agreed to do the revision surgery on my stomach if I decide to go that route. He is in Rapid City, SDak now and the head of their bariatric unit there. It is 880miles but the UW is 350 and no one in this town even wants to deal with it that I have found. I figure a 2 day drive easy especially if we get the new car we are thinking of. Toyota dealer in Spokane Valley has a 2016 Camry LE with 3K miles on it I am definately thinking of. Has 2 years remaining on the new car warranty plus a 7 year 70000 mile power train warranty cause it is a Toyota Certified car. Our is a 2006 Ford Fusion with 80000 miles that if it were a Toyota would be good to go but it has a leaking rear main seal. I'll never buy Ford again.
oh kewl! Glad he's willing to do it. I know you trust him. Kewl beans on the car too. Dunno bout nowadays, but Toyotas used to be cars that would last forever. Especially the Camry

Sure! This was a new recipe for us and while others we've tried were good, this was better. We caught part of a Cooks Country show and decided to try it: Shrimp and Grits - Cook's Country. One thing that spiked our interest was the mix of milk and water for the grits. I have a cousin in Atlanta who swears you can't make good grits with just water, grits must have milk to add creaminess. The sauce was tasty since we made the shrimp stock (easy and worth the few minutes to do it). We didn't get their recommended grits, used Bob's Red Mill instead. Oh, and there's bacon! We've never had that in shrimp & grits but we'll make it again - the best rating for a recipe.
Jup must have at least milk, if not half and half, or add some cream with the milk to make 1/2 and 1/2. And bacon is a must, but 3 pieces?? please.....dats not enough! lol

I'm a big fan of the 1945 movie "Brief Encounter" based on a Noel Coward play. A few months back I was excited to come across a 1974 remake that I did not know existed. It starred Richard Burton and Sophia Loren and was directed by Alan Bridges, a guy who directed several movies I like. No way to go wrong, right?

Wrong It was truly bad. Burton was sleep walking, and Loren was barely more animated. Amazing that so many talented people could collaborate over such great material and produce a total snooze fest.

You know, Forrest Gump was right. You just never know what you're gonna get.
Now ya done went and did it. First ya brought up Sophia Loren.......... the woman of Iffy's dreams...... then ya said she was bad. Not that he'd care how she acted, as long as he could look at her! hehehe

Just checkin since you said block.......you mean using 1/2 the block right? Cuz a block is 8 oz. I've never had smoked mullet, or unsmoked mullet for that matter. I did have smoked whitefish while I was in Florida though. Is mullet a fishy fish? The smoked whitefish was good, but had a lil tuna-esque funk that I could have done without :D That sounds good, cept I'm tryin to wrap my head around the relish in it.

Oh, as fer grits, ya might try your homemade chx/beef/fish stocks. Same goes fer rice!
JUP! I rarely use water for pasta, or rice or anything like that. Most always use stock of some sort, or a seasoning like sazon or something.

Fargo is one of those "car crash" shows. you look at it horror... and then just cannot look away. It sneaks up on you.

It's based on income. The doctor has to fill out some simple paperwork provided by Merck just to show she needs the medicine. Then, I fill out a bit more (still very simple) and send it to the company in Louisville, Ky. The paperwork needs to be renewed at the start if each new year.

Yepper, half block. Point being, use block in lieu of whipped.

And yepper, mullet is a somewhat oily fishy fish (think tuna/mackerel/sardines); perfect fer smokin'! Also great, pan fried fillet fer breakfast along side sum cheesy grits (wid diced jalapenos stirred in, if so inclined...)
